Bosss Bah Pizza: A family’s secret recipe for bar pizza sizzles in Braintree

Crispy, caramelized, and compact, bar-style pizza has its origins in the pubs and watering holes of Massachusetts’ South Shore. Joe Keegan loves bar pizza, and long before he opened Bosss Bah Pizza in Braintree, he lovingly honed his own recipe not in a restaurant, but in his kitchen at home, cooking for his wife, children, and friends every Friday night.

A HYPERLOCAL SPECIALTY: Original to the region, South Shore bar pizza is a “no crust” style of pizza with the sauce and cheese pushed to the edge of the dough, baked in a 10-inch pan, and wrapped in a brown paper bag. A FAMILY AFFAIR: Joe Keegan (top, left) learned to make pizzas at age 15 while working with his grandfather in a pizza place. Joe and his wife, Mary (top, center), made pizza at home every Friday night while raising their children, Kyle (top, center), April (top, right), and Andrew (bottom). After a successful career in computer consulting, Joe decided to open a pizza shop with Andrew to fulfill a life dream.

In 2021, Joe experienced a health scare just days before signing the lease on the shop. With money on the line and his father needing time to recover, Andrew built out the space himself by watching construction videos on YouTube. “He’s my hero,” Joe said proudly of Andrew. “He gets it all done and just never quits.” (Photos: Mark Hunt)
ELECTRIC-POWERED OVENS: The owners looked at commercial spaces in several towns before deciding on Braintree. After consulting with BELD, they even invested in electric ovens. “We use a lot of power in this little space, and the electric rate would be at least double in another town,” said Joe Keegan. “One morning the power went out as we were prepping for the day. A tree went down and took a line out, but BELD had the power back up in a hour. We thought, ‘If this was National Grid, we would’ve had to close the business today.’ We knew we made the right call to open in Braintree.”

QUALITY AND CARE: Joe Keegan makes the dough, sauce and cheese blend from scratch every morning. Carolina Gold Chicken (with a tangy barbeque sauce), Meat Bosss and Veggie Bosss are the most popular specialty pizzas, and the Keegans sometimes ask customers to test new offerings. “Braintree has been fantastic to us.
